1st time reverse searing. 2.75 pound cowboy steak. 275* in oven followed by 5 minutes on grill.

Great looking steak!! Oh yes, reverse searing is a home run.....nice job!!
 
That looks great! :clap: My bro-in-law does his the same way but goes lower than 275 in the oven (I want to say 200°) and throws it on his Green Egg at 800°+ for a couple of minutes. I like to throw mine in the smoker first to add some extra flavor.
 
That's how I cook those monsters. Indirect on the 26" kettle with a chunk of wood then finish with a sear.

Steak that thick, reverse sear is the only way to go. But why in the oven? Low temp with wood smoke on grill is much tastier in my opinion. That said, it looks dead on perfect and I am sure it was delicious
