Default A Pig on the Cinderblock Pit (graphic)

Sorry... a bit graphic!


This was a cook I did 2 weeks ago, it was the last thing I cooked before getting hurt.



picked one of the smallest pigs I had for this cook. (not one in the pic... one in a different pen) Didn't know how many people would be here for the party.









decided to skin the pig instead of scalding to save time...








Butterflied to lay flat and chilled overnight...





Prepared the block pit. Added beer, dry rub and leeks to the drip pans...



Injected with a mixture of apple juice, water, worcest sauce, soy, brown sugar and seasoned with a mix of Big Poppa's Money Rub and SYD Meat Rub...



into the pit...



let it go for 4 1/2 hours...adding coals to each end about every 45 minutes.



turned and let it go for about 4 1/2 more hours...





let the pig rest covered in the pit for 30 minutes...



shredded some of the meat...



went the easy route on the side dishes... slaw, potato salad, corn, beans...







Didn't get pics of the veggies, chips and dip and other stuff.

It turned out great. Didn't have as many leftovers as I thought I would too. Hope to do another one soon. :)
