You have no idea how excited and exhausted I am. On top of cooking for the comp, I also cooked 20 butts 25 brisket flats and 12 racks of ribsall for the People's Choice. Oh and a Sweet Potato Casserole for dinner at Big Poppa Smokers. Did I mention that my help never showed up and I did all this solo including runnng my boxes? By the time the brisket turn in came around I was dying and got it in with less than a minute to spare?
I must say this, I had always resisted the idea of using all of the commercial injections on my brisket and pork but I did it for this contest and I can honestly say,
