Been asked to cook the meat for a party of 50. Brisket, ribs, beans, and tator salad will be served. I know to figure about 1/2 lbs brisket per person. My question is how many ribs per person?
 
Need a bit more info.

What is the ratio of men, women and children? Any really big eaters involved?
Are you thinking full spares or St. Louis cut? Babybacks?
 
I will be for a high shool (with cullinary tech) graduation party. Don't know ratio or how big of eaters. Planning on doing St. Louis cuts.

Doesn't matter, putting to much thought into it.

Spares= 2 to 3 bones per

With another meat, 3 bones PP will give you leftovers but always play it safe and you won't need to know what size guests your serving! :cool:
