This was the 1st brisket I've done for some time, It was just over 5lbs. I rubbed with beef bullions and rub threw in a 3oo-F smoker, high heat cook which I do from time to time. About 3 hours or so I decided to flip the thing, bad ideal, didn't think so at the time, but bad. The cheap tong twisted with the weight of the brisket. Yup on the ground it went, not happy

Even washed it off, still not happy

Trash canned it. It had a nice ring going. I had double pics, maybe this will help. The last pic is what the other side looked like.
