Saturday brisket flat

I picked up a 6 3/4 pound flat to smoke today.:-D

Trimmed and rubbed then wrapped in plastic wrap and in the frig Friday eve.

Out of the frig and unwrapped - added a little more rub and in to the Spicewine using pecan for smoke.

coming out of the smoke for a quick peek--it's at 160* internal and going into the foil with some special elixir

Just sliced. Kind of a small smoke ring but it was tender and juicy with a great flavor.:-D
 
very nice smoke ring...looks good. nice clear water in the pool:-D
 
Excellent looking brisket. Ditto for the pool water, I gotta get my heat pump going so that I can clean the green winter crap on the bottom of mine out.

Looks great. I hope mine turns out that well. I think you're just rubbing it in w/ the pool. :) Most pools up here still have winter slime on them.
 
That's one thing I don't miss, the first spring cleaning of the pool. We use ours year round.
 
Smoke ring looks fine form here! Think I will try to find my sun tea jug for today!
 
Looks good to me - you are definately too hard on yourself on this one.
