Mad Science Experiment - Enchilasagna (pron aplenty)

OK, this isn't really an experiment at all!:biggrin: I'm just cleaning out my fridge, and I have a lot of Tex-Mex type stuff. I recalled BigMista's Enchilasagna and well, that seemed perfect for using a lot of stuff in one dish.

I started by firing up my WSM with some Pecan and Cherry.

Then I looked for a good deep casserole dish...

I gave it a quick spray of PAM, and then put a thin layer of Taco Sauce on the bottom. This is the cheapy mild stuff the kids like and I figured it would make a good sauce base for a Lasagna type dish.

Then I laid down the first tortilla...

For the meat on this layer I used my leftover Taco meat from last night which was 1/2 crumbled leftover fatty and 1/2 ground chuck.

Then I put on the cheese layer with some Cheddar...

Then gave it a little hot sauce with the kind I like on my taco's...

Then another tortilla...

I then added a layer of Jalapeno slices and Roased Red Pepper strips...

Then I spooned on some leftover Ground Brisket Chili...

For this cheese layer I used Kraft American slices:biggrin:

And then a light coating of Sour Cream...

Followed by another tortilla...

I then topped with some leftover Chicken Sausage I had made. This particular one is Jalapeno Bacon & Cream Cheese Chicken Sausage. Yum!

Then I figured I should add a little rub. After all, this is a BBQ site, right?

But then, since this is a Tex-Mex dish, I then had to add more hot sauce!:biggrin:

I then added a layer of Pepper Jack cheese, but it looks like I forgot to take a picture of that!:shock:

By now you probably know the drill...lay down another torilla...

I spread on another layer of the cheapy mild taco sauce...for moisture mostly, and the red color...maybe also for the tomatoes...

Then I added a little more cheese for good measure and a couple more jalapenos...

I cooked it for 1.5 hours in the WSM in temps from 275-300 (it was off and on drizzling and raining). Here is the finished pron from all angles for your viewing pleasure.:biggrin:

That does look insane....and your setting bad precident, no Tom, you cant use my good casserole dishes on the pits!
 
Looks good. Did you save enough of those fixin's to have a quesadilla entry?

The wife's not here so she doesn't know. She'll be back soon but since it's in the WSM, she can't see it! What I'm going to do when it's done....I haven't thought that far ahead just yet.

Oh, it's not done yet. I'll post finished pron when it is ready. I just put it on the WSM a few minutes ago.:wink:

Some of these ingredients are leftovers from my Quesadilla entry I put in yesterday.

I just finished lunch, and that's got me drooling on myself! That is a great way to clean out the fridge. Looking forward to the finished product!
 
That had all of the sences tingling. It looked good, I could imagine the smell, and OH the taste it should have.
Maybe that could go under honorary Quesadilla entry it had all the fixins.
When the wife see that smoked bowl she'll figure it out real quick.
 
It's been on 45 minutes at 275. It's looking melty, but not bubbly. I'm waiting for the bubbly.

I started my WSM to run more around 325 but it's been drizzling all morning, even though the stupid WEATHERMAN said it was supposed to stop this morning. I opened the vents 45 minutes ago to bump up the temps and it started drizzling a little heavier. So I am letting Mother Nature dictate the pit temp today. No sense fighting.
 
It's 1220 and looking for some finished pron! Come on, I'm hungry after lookin at all that good grub!
 
Chris, you are a brave man. The food looks like it's going to be just downright amazing. But I get in trouble for even thinking about using my wife's pots, pans and dishes in or around my smoker.

I hoping to see some pictures of the end. Both of the food and what she does to you.

First piece gone......and I'm going back for seconds.:biggrin: Not a light dish, but can't stop eating it.:shock:
 
OK, now I'm full. Probably stuffed actually.

So my wife came home while it was cooking. She was in the other room working on her computer when I brought it in. I actually let it cool, sliced it, took my photos, ate, and put the rest in the oven to hide it and keep it warm while I ate in case she came back. She didn't.

So she still does not know yet, and man, I know I don't have to tell y'all, but that thing is DIRTY!!!:eek:

Well, anyways, it's in the oven to keep warm, and she walks in to tell me she's leaving tonight to go watch TV at her Mom's!:biggrin: So as long as I can keep this thing out of view until after dinner, I will have all night to clean it! Tee-hee!:lol: Maybe I'll post a cleaning thread with pron?

this thing was clear glass when I started, so the goal is to get it back that way. Right now it does not look anything like it's former self.
 
Growing up my mom would make the same thing but use corn tortillas...and man was it good!! Yours looks great.
 
That looks awesome.....I'm actually really pissed I didn't get any.....you're lucky I don't know your phone number.....I would call your wife and rat your arse out for using her cookware and not sending me any......hehe
