The results of todays efforts:

All three slabs were rubbed differently and presented to friends for taste testing. The middle slab was definitely the favorite.

This is my best effort at chicken so far. I didn't pay much attention to the shape today as I was more focused on the skin and taste and tenderness for this one. The skin was almost, but not quite, crispy. All of it was easily bite through.

That's some awsome looking ribs, even before they were cooked!!.perfectly trimmed.chicken too!. I gotta practice on chicken quick.
 
I am doing ribs & chicken today. Ribs are on for 90 minutes so far.....thighs will be rubbed soon.


Just for giggles, I am doing some smoked sausage as well.
