"Country Style" ribs, squash, and smothered taters on the grill

Dinner from last night. Some thick cut country style ribs, acorn squash and some cut up potatoes covered in sour creme and cheese. Nothing too fancy, but it was pretty good eating.
Just some round white potatoes that I cut up and then add a little oil to then sprinkle with garlic salt and parsley.

The ribs are coated in a basic rub I make and the squash has butter, brown sugar and chili powder on it.

Every thing gets put on the Weber with RO Lump and a couple chunks of hickory.

I cook the potatoes until they are done then cover them in sour creme and cheese and put it back on the grill to melt together. The brown sugar and butter all melted into the squash and I even had a small smoke ring on the pork.

Simple is good. My favorite way to cook. I like the smothered potato idea:clap2:
