What is the secret to getting chicken thighs skin to break off without completely falling off when you take a bite?

Hot Hot Hot!!!!

The last two contests we've done we had our best two chicken finishes, 4th and a 2nd. We cook on wsm's and when it's chicken time we open up everything, running so hot the thermostat on the dome is maxed out and cook them for 35 minutes and than dunk in sauce and on for another ten. Talked to the head judge and when our chicken was to be judged it was still to hot for the judges to eat it so they had to put it aside and do it when it cooled off a bit.
 
Don't brine, remove fat from under skin, choose a brand with thin skin (Smart Chicken), and cook hot.

We have walked in two comps for chicken and we DID NOT scrape, scrape, scrape. There are other ways to get bite through skin without messy scraping.
 
There are multiple ways to get bite thru skin, but all of them take lots of practice in order to get skin that is consistently bite-thru.
