OK, this one was for a throwdown but it's good enough for it's own thread...

It began with:

Marinade:
1/2 cup pineapple juice
1/4 cup vinegar
3 tbs soy
3 tbs honey
1 tbs turbinado
2 tsp fresh ginger
1 tsp cayenne

Annnnnnnd the payoff! I wanted to call them spash-kabobs, but Redhot came up with Spatay!

Strike a pose...

The marinade was reduced to a sauce for drizziling after cooking. Last pic for the entry please.

I could not believe how good SPAM could be. The marinade was reduced by 1/2 and became a glaze and sauce for the plate. Redhot said it was a keeper and I'm thinking of using it on some sirloin next...
