Cajun gumbo does not have to contain seafood. Chicken gumbo is very common in cajun areas. Andouille and tasso are common to both chicken and shrimp gumbos. Pretty much everything is the same but the main protein.

BTW, there is another style of gumbo called Creole Gumbo. I've never made creole gumbo, as I like cajun better than creole. Creole gumbo doesn't have that dark, earthy roux, and does have crushed tomatoes. Creole gumbo is typically a seafood gumbo, using shrimp, crab and even oysters in season.
