So about 10am this morning the wife says she wants me to get the big London Broil out of the fridge in the storage room. There was only one piece of thawed meat in there. This is what she thought was a London Broil. All 13.5 pounds of it!

Bless her heart. So we are having brisket tomorrow. First brisket on the OTG and I am impressed by how well it holds temps. This is about 7 hours in and only about 1/2 way through the coal and wood.

I really like the "ring of fire" method for this type of cook. This is my first time with it as well and things are going smoothly. I will update later either good bad...

Yeah, that is a heckuva London Boil......

Nifty thing about the ring of coals is it heats the whole inside area well enough, I've not even had to be concerned with moving the piece away from the charcoal burn area at the lower heats..........

Looks good so far !!!!

12.5 hours later...

Butter tender everywhere. Flat was 205 and point was 190. Pretty proud of this one considering it is the first on the OTG and with the ring of fire.

Looks like you Killed her London Broil - but made a Killer Brisket - Nice Job!
