I am in the process of building a reverse flow smoker out of a 250 gallon propane tank. I was needing some suggestions for the thickness of the fire box.

1/4" ok, 1/2" better! You can squeek by with 1/8" (11 gage) if you use firebrick to line the interior (at least the bottom) but I don't recommend it.

1/2" total - either solid 1/2" or (2) 1/4" w/ insulation

I made a RF smoker out of a 250 gallon propane tank . I used 1/4" steel for the firebox and RF plate. I did not insulate the firebox. It works great and have no issues .

I went qtr inch and sure wish I had done insulated or half inch.
Don't get me wrong, the qtr inch works but if you have the option I'd go insulated.

I think the old adage of "less is more" does not apply in this case. I would go 1/2 inch or insulated 1/4.

Insulated w/ mineral wool is orders of magnitude better than 1/2" steel in terms of heat transfer (or lack thereof).
