My First Fatty(s)-Venison

I have wanted to try smoking a fatty for a couple years... But the greasiness seemed through the roof...

Finally saw where someone had done a Ronello... Immediately thought of Chile Relleno...a couple weeks of pondering... Finally went forward with it... But used ground venison (added an egg and some breadcrumbs...of course some spices)... Stuffed with- sauteed garlic, baked poblanos, rice, sauteed onions and mushrooms... One naked the other with a bacon wrap and a lil bit of sharp cheddar... Hit it with some coffee rub...and let it go

bacon didn't crisp up before it was done... But the naked Fatty was perfect!!!

and then Nekkid



It was a smash hit!!!

I am a convert!!!
