Nice! I'm curious as to the cook details too.
My local Asian market sells those in those sizes and they always ask me how thin I want them cross cut. I think I'll get them whole next time. :)
 
My wife loves short ribs, we never see them (cut or not cut) like that here...
Any chance they may also call them something else?
I will have to check with a couple of the local butcher shops, even if they are a "special cut".

yeah...details on the cook!! I've been looking around here in so cal for a good deal on them but it's been pretty tough to find cheap ones :/

A few Asian meat markets sell them around here for $3.99/lb.
 
Got those from Restaurant Depot. The average raw weight/rib was 2.5 lbs. I used salt and pepper and I tried to keep the pit between 275-300. These ribs are really too big. I prefer the short ribs that are about half that size. They cook faster, there's more bark and they're easier to serve. All that said, no one was complaining.

4 ribs served 7 adults and 2 adolescent kids. I have some leftovers.
