First Low N Slow Brisket w/ Pron

Tired my first low n slow brisket last weekend, and I must say it was fantastic! 12lb select packer from Walmart (only place I can find packers). Simple rub with equal parts salt, pepper, and paprika. Cooked on the WSM at 225 until it probed tender. Great bark, super tender and juicey. My first two briskets were hot and fast and I didn't get the results I had with this one. This cook made me a low n slow man for life . . . well maybe not for life, but at least my next few brisket cooks. Thanks for looking.

Those sliced shots look farking fantistic!

Beautiful heavy bark along with the nice ring. I'm diggin' it.

Yep, it looked like a meteorite when I pulled it off the cooker, but inside was nothing but tender, beefy goodness.

Thanks! It took 14 hours from the time I threw it on the cooker until it probed tender in the flat and point. I only used my ET 732 to monitor the temp at the grate and I didn't open the lid to probe it for the first time until the 10 hour mark.
