60 degrees today and the beer is flowing.

I'm defrosting on right now and I have skin on the lower section.

Mine was about 50% covered in skin.
I take ALL of it off. Other wise, that hard earned bark you've created is going in the trash. I trim away as much "non-edibles" as I can, that way the back is saved and not thrown away.

Using the WSM 22.5 running solid at 225 since 10am this morning. No breeze, still about 56 this afternoon. Using an entire 16# bag of cheap knock-off Kingsford (don't judge) and some scraps of cherry from my wood shop.

It's 5pm now. Give me a second, I'll go grab a photo.
I've since added a couple Tennessee Pride "milds", nekkid, of course.
