7 racks - Wed. - more pron

Now I did it...

Volunteered to provide ribs tomorrow. Cooking for a small gathering (12-14). Have 7 whole racks in the cooler... 35 lbs. untrimmed... thawing since Saturday. Gave two people advanced nibbles of my grub... no complaints :mrgreen: Expecting people wanting extras to take home.

Already packed up and trucked the smoking gear over to the temp location... with the standard patio umbrella, lounge chair, and the stereo.

Now gonna trim down tonight. The steel will get a workout. Me too.

Still got 15 lbs left in the freezer.
Time to wake up the chickens tomorrow @ 4:00 AM.

OK... gonna tease 'em some.

Fired up the smoker @ 2:30 AM Wednesday.

Rubbed up some rib trimmings (sternum) and threw them on to smoke @ 3:00. Started to smell real good when the ribs got on @ 6:00 AM.

Bastage... I am sitting in the closing session of a conference. Now I am bored AND hungry!!!
 
Here's the results: a batch with camelized sugar rub and one with a cayenne pepper zip.

The zippy batch was a hit... people couldn't stop eating 'em.
