Jamaican Grilled Chicken Sandwich with Grilled Sweet Potatoes

This one turned out better than expected. The family requested it on the menu rotation.

First the "stuff" for the Jamaican Grilled Sweet Potatoes. The cilantro didn't make it into the picture.

Next I mixed up the mango spread.

Mayo, Yogurt, Mango Chutney and fresh mango

Now for the chicken

I didn't get any pictures of the chicken prep but there wasn't much to see. Butterfly chicken breast and cover with jerk seasoning.

Parboiled the sweet potatoes and added to the grill.

Mixed in with the brown sugar, butter, ginger, molasses, pineapple mango juice, almond extract and cilantro.

And can't forget the pineapple.

And all together.
