For you folks who cook with cast iron

Nothin on the grill or smoker today but thought you folks who like CI would like my latest CI pickup, clean, and inaugural cook:

Picked up a Wagner #8 online and was supposedly cleaned and seasoned. Got it in my hands and it was a Mess! Forgot to take any before photos, but after 3 rounds with oven cleaner sitting in a bag for 24 hrs she was finally clean enough to my liking.

I then scrubbed her with a SS scrubber and dish soap concentrate twice. Then dried her and on the stove for a couple minutes to dry more. I then greased her lightly with shortening and put her in a 350 oven for 15 minutes. Wiped her with a dry paper towel and then back in the oven for an hour.

Any constructive criticism and feedback is appreciated! :D. Her inaugural cook I spoiled her and had her cook fried chicken drumsticks! My first time ever cooking fried chicken. Came out tasty!

We use cast iron a lot,mind you most of It is enameled
you folks ever clean Cast iron, with molasses and water?

when/why do you use molasses and water? Usually just a good wipe out does the trick for mine.
 
That looks great! I have a 5 gallon bucket of water that I added a can of lye too. I just let my pans soak in that solution to loosen/ eat away the carbon and grime. Have you tried that? I have not used oven cleaner before.

But, you call that a mess? When I got mine from a craigslist seller they had been literally stored under their minibarn for years and had at least 1/4 of crud on them. One of em (a 12" Lodge) is my all time favorite skillet to play with now.

I was thinking the same thing. The uncleaned one looked pretty clean to me. I'm cleaning 6 CI Skillets that were my wife's grandmothers. They have 40 years of carbon and grime. Some of them I didn't think could be saved, but CI lasts forever if you take some care with it.

The first two photos said unseasoned :D. They were after 3 rounds of cleaning ;). I forgot to take the "before" cleaning photos lol
 
Best way I have found to clean cast iron. Throw it in the oven and do a self clean and it knocks any crud off. If its rusty do a 50/50 mix water and white vinegar leave 2-3hrs and that usually does the trick. Don't leave it longer than 4hrs or it will start to eat the pan.

Nice work restoring the old Wagner Ware to cooking duty. It is off to a good start.

Keep it on the stovetop and use it for damn near everything and in a few months you'll be amazed at how well it performs.
