Which sauce for the roasted chicken

I am making a nice roasted leg of chicken with the followin rub.

  • 1-2 teaspoons salt
  • 2 teaspoons paprika
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
Im lookin for feed back on some butter or cream sauces that would flow with that rub.

Im thinkin of a red curry sauce, lemon butter sauce, or a coconut chili sauce. What do you guys think? It will be served with wild rice and a nice lettuce salad

They all sound good, but I'm a big fan of lemon on chicken, so I vote lemon butter sauce.

i love chicken and lemon to. For presentation im going to put the butter sauce in a coconut shell. Gotta impress the company. haha
 
I would think the lemon butter sauce would be a better complement to the rub you described. Both the red curry and coconut chili sauces sound like they would obscure any flavor from the rub due to the strength of their own flavors.
 
To make the Lemon Sauce a bit more interesting; put a couple of drops of Whiskey in it.

Really? that sound very interesting. Gotta borrow some whisky from the neighbors now.
 
Mix some dales steak marinade together with brown sugar to form a loose paste . The sweet and salty is pretty good.
 
It might be too late, but go one step farther than the lemon butter, add oregano, and give it a "greek" flavor...

i was thinkin of adding some sort of herb such as herbs de province. But i think oregano would be better because its only one herb and it is more subtle than herbs de province. i tried tarragon and did not like that.

As for the white sauce, can it be used for a dipping sauce?

I'm with others on the lemon sauce. Sounds yummy.
 
i agree that the lemon sauce goes good with that rub, but the coconut chili sauce sounds awfully good for another time.
