I I Smell Smoke will be holding a 1 day demo style competition bbq class in Keene NH. Cost is $200 per person and $125 for a spouse. Email ismellsmoke@ verizon.net for more info
 
Any chance you'll be doing an overnight class this year like the one with Guru last year?
 
It seems like I know somebody who lives up there.
 
Sent the info to a buddy in Keene - he said he was going to sign up for it. He bought a WSM a couple of years ago at my suggestion and is now itching for an egg. Reckon he is going to be looking at a Backwoods when you guys get through the course.
 
Let me just say, WHAT A CLASS! We learned a ton and had a great time. It was a nice suprise to have Mike from Lakeside Smokers make a guest appearence!

2 key take aways:

1. Always use Kingsford charcoal with lighter fluid
2. Never trim chicken thighs, judges like extra fat,skin and bone

Well worth the price if you ask me. :)
 
I already knew those things. I always use lighter fluid and why would I trim a perfectly good fatty thigh??
