Made my yearly trek up to New Hampshire's lovely North Country for the 4th. In the town of Colebrook, the Kiwanis Club sponsors a little parade and a chicken BBQ afterward and fireworks at dusk. $10 buys a half chicken, slaw, macaroni salad, watermelon wedge, bun, and water/soda.

That is one good looking cook! I do love chicken cooked that way.
 
I wonder what they put under the pit to catch all the grease?
 
That is awesome - looks like those guys have been doing that for a hundred years.

All the grease falls onto the coal to give it the special taste. being spread out like that there won't be that big of a flare up. Also, if the coals are on the ground, the flame are fairly far away.
