My 1st time spatchcocking a chicken. Not too shabby!

Seasoned the birds with a variety of seasonings from my stash. Decided on the WSM without a pan, temp around 250 to 350. Flipped the birds from top to bottom. One bird was HUGE. My neighbor gave me a hand or 2.

Great flavor and super moist. Cooked until breast was 165. Rested and split it up. Thanks for looking.6 adults didn't finish it.

Chicken sandwiches this week for sure. :becky::becky:







 
I love spatchcocked chicken - great way to cook it. Cool looking cook shack you've got back there, too!
