Got to tell you. Tonight, I hit the sweet spot. This is what Q is all about. I rotiss'd at tri-tip on my Weber and got it square down the line. My Cajun rub with brown suguar... Above the bed of hickory, cherry, and maple. I watched the wood smoke envelope the meat and do it's work. The fat juices basting... I watched the glory of great success. Man it was hitting the "sweet spot". :mrgreen:
