I don't know what kind of experience they all have w/ the final meat selection, but it would seem Butcher's would have a bit of an advantage. I come to this conclusion believing that none of them compete on a regular basis w/ the final meat as is, just based on the part of the country they compete in most frequently and guessing that most are KCBS comps. I am jealous of David's knowledge of meat and hope to attain that someday.
