Gorgeous! (Excuse the ignorance please) What is the species? Looks like pork but then the grain of meat looks like a beef flank on one side of the ribs or is it belly?

I cannot identify, please educate me. :crazy:
 
Here it is rubbed down with a light sprinkle of Smokin' Guns Hot and a heavy coat of salt, pepper, and garlic.

OK, got the ribs on the drum. Now, I wait. Fire is regular K with white oak chunks.

The meat counter at my local Asian market keeps them in large square slabs like those. You tell them how you want them sliced. They usually slice them down to about 1/4" for grilling.
 
Figured beef from the contents of your rub. Those look outstanding.So they are uncut short ribs?
I will wait paitently for the final mouth watering results.
 
Wow! :thumb: How long are those bones Bo? Looks like 12-14"!

At least, I think. I have them resting now and will measure them before I serve them.

There was considerably more shrinkage than I expected but hopefully they will still be tasty.
