I'm flirting with the idea of doing a few local competitions next year, so looking to see what all I'd need to buy.

What are some of the MUST HAVEs for a beginner?

Table(s) with PVC leg extensions will save a lot of pain in your back, some kind of shelter, and a way to hold it down in a storm

My thermapen.. I don't use remote thermos, I use the thermapen to probe for doneness and give me an idea of how long the big cuts have left.

Well it sometimes depends on the exact model of table and how the legs sit. The 2 tables my buddy and I used to bring each had a different lengths of pvc to get them to the same height.

And that smokingguns list is a really good starting point. I'd add stuff to tie down your canopies if you are not on grass and cant stake them into the ground. We used 5 gallon buckets and filled them with water.
