Well I tried my hand at pastrami!

Here it is after soaking and rubbed ready to sit in fridge overnight!

Here it is sliced and ready for the rye bread and mustard!

It passed the boys taste test!:clap2::clap2:

Smoked to 160 then double wrapped to 190. No steaming required
