You said you didn't know where to post this and I have to say I don't know if I should be responding! Did you find anyone yet? How many people are you expecting? I've never actually catered before. I have cooked pulled pork, brisket, beans and potato salad for about 40 people.

How formal are you wanting to be? Can you spend any time on your wedding day to do anything with the food? I'd certainly be happy to help you cook the meat. I've only got 2 WSMs but we could cook it in batches and then freeze it until the big day. I'm just down in Columbia so we could sit around with some adult beverages and tend the cookers for a couple of Saturdays.

In some ways l'd love to bid on the job but I'd really rather start on something less important than a wedding! It's the same reason I won't do wedding photography. A screw-up can ruin a really beautiful day!
