chuck tender roast question

I'd like to make enchiladas using this roast

can i take this to the 190-200 range and shred it or is this the type that should be eaten in the 140ish range?

I have found that I need to take to 205* - 210* to get chuck to shred. That cut of beef in the 140* range would be very tough.
 
I see you get your meat from WalMart. It's enhanced so be careful with your salt in the rub you use.
