Default New guy from S. Florida........

I learned of this site through a post that I made on Yahoo when the author made claims that a rub (with no salt) can make pork more tender.I have spent my life surrounded by food as a cook, Chef , farmer and a student of food science which I love.I have no formal training like my family members who own Rests.I chose a different route.....Imagination with no food cost to worry about.The culinary world has changed in terms of who stays in business and who does not. Thankfully I`m retired after selling my farm.Since I have always been a big advocate of experience over book knowledge(Which has it`s place).The best cooks have to adapt to there surroundings and ingredients.I look forward to the schooling that I have in order on brining(not a big fan of)smoking, injections, rubs, marinades, hot and cold smoking with favorite woods, sauce and rub recipes.Long winded.......so hello.
