Please let us know if you find something as in 10 years I've had the same problem. I have a strong suspicion that the bigger buyers don't have this problem. Take Franklin for instance, in his book if memory serves me correctly he said he was buying like 20,000-30,000 lbs per month from Creek Stone. I'd be willing to bet that if any of us were buying this amount from Sysco we could describe how we like our brisket and they would make it happen with consistency. If they didn't then I bet several of their competitors would to get that account.
