Chittlin chunks is actually how the French version of this is made.

thanks for the vid. wife is from new orleans area and she wanted to make some andouille this year during the family sausage making extraviganza. We used a 1/4" plate, but after seeing your vid, I think I'll make a suggestion to use a 1/2" or larger plate next time.
