Matt (fantomlord) is DA CHIT! He picked up his lamb from the butcher today and promptly swung by for a trade! I gave up some grassfed Hereford beef and scored some lamb chops, a leg, some ground, and a stew shank in return. I treated the chops like I would a beef ribeye: some just got S&P, and others got a 2 hour dry rub of sea salt, minced garlic, and herbs de provence. That was rinsed off before grilling hot and fast over lump with cherry splits. I overshot a TAD since it was dark outside and my back porch isn't very well lit. Served with quinoa cooked in chicken stock, steamed broccoli, and hollandaise sauce. And all washed down with Matt's home brewed stout. Some GOOD farking beer and food! Never cooked lamb before, I'm afraid were all HOOKED! And Matt's a pretty cool guy to boot, my wife wasn't even all like "get him outta here" like she is with my family!

Looks really good Chris. I need to try lamb myself one day.

Nice that you and Matt were able to hook up and work out a trade.
