Dusted properly with a rub that a buddy made. I have zero idea as to the ingredients.

It looks as if I overextended the probe. It was poking out out on the bottom side.



Thus the weird temps on the Maverick.



I was also rushed by the wife who was urging me to hurry it up...

Basted with Shak's sauce throughout the cook and hit with a homemade sauce at the end.


Turned out great.

I have legs and thighs on the Assassin smoking as we speak as well. Hope they turn out as well as yours looks!!

That Shak Attack sauce is really good as a mopping sauce.

Well....I done goofed, it seems.


I'd lit the coals intending to get them hot, fast. I'd stirred the exhisting coals and added some mesquite chunks and slivers which I'd used as tender.

I'd gone inside a minute to rub the bird and came back to a hawt fire as the mesquite chunks were burning mightily.

I quickly attempted to put the smoking stone in place. Yeah, not too smart doing that without gloves.

I got one leg of the stone on the bracket and lawdjebbusissafire dropped it an inch or two to the other brackets. Short drop cracked it in half. Arrrrgggghhhhhhhh.


Good thing I still have the Webber grate and pizza stone. I'll be able to use the broken stone over the grate. Should work just fine.

Cooking around front is getting old. My backyard is covered with old deck wood and a partially finished new deck. I'm hoping the weather will cooperate so it can get finished up!
