I've stored a few brine recipes in a recipe folder on my computer. However , my question is--I usual marinade , esp. w/ chicken--in a cheep italian dressing with spices overnight. Is that a " type " of brine. ?:icon_blush:

No, brining is a completely different process than marination. Here's my

Short answer; marinade is a vinegar-based (acid) bath... a brine is a salt/sugar water absorption.

Marinade will help at a surface level, maybe a little penetration.

Brines will penetrate all the way through, given time.

Both method work, but not for all things.
