Up at 3 a.m. to fire up the pit. And then at 3.5 hours in to the cook. 9.9 pounds of prime Texas steer!

Almost 8 hours in, I tossed on some Quail sausage. Gotta eat while I wait for brisket.

Lookin good, but yeah....the P-RN word is a "no no", which is why we use the word "PRON" here. Keeps the site from getting a "naughty" rating and showing up in searches.
