Q'Believers---Rub it...Smoke it...Pull it...Shovel it! 2 Butts on the UDS, 4 inches on the driveway! UDS Dryer vent exhaust mod is patented by the Hanging Pigs--ok, maybe not!!! IQue 110 blazing at 275. Not sure you can make it out in the pic but I used an old drum lid and some recycled castor wheels as a dolly. Wanted wheels but did not want to drill into my cooker so this works great.

Ique 110 controller

@sjm845 or anyone else who uses these - How do you like the ique 110? I have been thinking about getting one to try out on my uds.

The IQUE works great, especially from zero-to desired temp. Guys on my team use the Guru and to be honest I don't see any difference in terms of function. Yes, there is no digital readout...but the Ique just looks like it was made for a UDS. I love the fact that I've got $40 into my barrel but $120 into the fan!!!

I have to modify the lid to seal and capture the drum.. I weld a 1/4" rod around the perimeter of the cone and then a 1 1/14" flat band to the rod for the capture. Then glued Rutland to he bottom of the rod for the seal.

Well, doing my first UDS cook tonight (also my first over night cook). Wish me luck :)

Started things off about an hour ago, and I must say so far I am very impressed with how easy the temperature is to adjust. It's taken me a little bit of tweaking to try and hone in on 250, but I have full faith that once I do it'll be rock solid.
 
Well I finished up my first UDS (heavy on the U!). Thanks for all the help. I read all 697 pages and what a great read, lots of great info here.

It's seasoning now, was able to get it open to about 400deg and going to let it go for about 3 hours. Can't wait to get some pork on the grill!

Just finished customizing my new UDS.
Still need to add handles and a side table.

Having constant issues with my UDS! I can not hold constant temp no matter what i do! Everytime I cook this happens, so that tells me either I'm consistently screwing up or something is flawed on my cooker.
This morning at 4:30 started a Pork Butt got my temp up to 250'F before putting it on, and have been fighting to hold between 225-250'F all morning so far, either drops down to 200 then I open valve more, skyrockets up to 280 while waiting for it to equalize, back off then drops way down again. I'm waiting anywhere between 20-30 minutes before making adjustments. I've tried micro adjustments on ball valve. Using 2 ball valves, 1 completely open by itself and temp goes down, open second maybe a 1/8 inch and temp jumps into 270-290 range. What the H-E-L-L? :mad2: it's driving me :crazy:

55 gallon with lock ring lid
14 inch diameter x 12" basket, raised 3" off ash pan
3ea 3/4" close nipples w/ 2ea 3/4" ball valves and 1 cap (had to for fighting this ongoing problem) 2" off bottom of drum
3" diameter x 6" tall exhaust on lid

I had same trouble with mine, the valve does not work for me I just leave it wide open and cap my other holes, then unscrew but do not remove 1 of the caps to adjust the temp.

Are you using an electronic thermometer?
Do you have 24" between the cook rack and the coals?
Using lump? I noticed temp flare up with kingsford...
You may have to use a diffuser or water bowl as a last resort
Your chimney may be "pulling" air through the intakes. I use the the factory bung with no chimney.

Using Redi Chek Smoker remote thermometer
Royal Oak Lump Charcoal
Grate is 24 inches from coals
Normally use water bowl, sometimes like today using aluminum pan with Apple juice.
My chimney has damper, i have thought of this as well but no difference.

Also, not in a position to catch wind drafts, have her blocked in.
 
Sounds like you covered all the usual problems....I never had to use a water pan. I have one 3/4" pipe open and one ball valve opened half way. As the meat cooks and temp. rises i close the ball valve accordingly.

BTW. I use B&B lump. the temps are more controllable with it..

Sure it will burn 230 for 20-22 hours but when am I ever gonna use that?

That's a wire egg basket, if I'm not mistaken.
 
You might have a air leak, does your lid fit tight also check any holes you made like for the valves. You might have a drum that's outa round my first drum did the same things yours is doing never could walk away for more than 20 minute. I have since made a new one now and it hold temp all day. Good luck my friend
