JJ, Yeah I smoked till it hit 165. Then put it in the pan and covered with foil till it hit 190. Then left uncovered so the bark can firm up and the liquid to reduce. Once it probed right, pulled one part, returned the rest to the grill cubed up for an hour and a half more. :thumb:That looks unbeweavable! Did you smoke it for awhile then put it in the pan?? What temp and for how long did you go?
Gotta get the info, I wanna do that!
