With all the recent threads on Dino bones I couldn't stand just looking at pictures of them anymore and set off to the butcher shop:decision:

Ended up with a cryo pack. Boy these are some serious hunks of meat.

Trimmed one up and got it ready to hit the Akron .





Rubbed with love and onto the Q.



An hour or so later..






And finally 5 hours later at a modest 280 degrees its time to dig in!





These turned out really good, now I am glad I have 3 more slabs in the freezer.
 
They look delicious, I have done them a few time but found them tough if pulled of the smoker before 190 IT. Beef ribs are by far my favorite
 
Those look great. That might seriously be the biggest short rib I've ever seen. I don't think you can even call that a short rib with a straight face.
 
Wow those look great! Beef ribs are my favorite...yours look excellent! :-D
 
Short ribs are quickly becoming one of my favorites and looking at those sort of makes it a no brainer
