Being a woodworker, walnut is my favorite building material. I would get those logs milled and build something if it were me, but... I have tried it before for cooking.. It can be a bit strong, sometimes bitter. Try it out, use it sparingly. It can almost fall into that mesquite category, better for red meats, not so much for fish and poultry.
