A butt and some briskey

After looking at all the deliciousness on this forum all week, I had the itch for smoked meats.. I asked the Mrs to pick me up a brisket and a pork butt.. (Usually I pick out all my own meat, but I've been working massive overtime lately, I thought I had her trained by now) She got the butt part right, 9lbs, nice color, money muscle etc.. The brisket, on the other hand, was 2 sad excuses for flats. Each about 3-4lbs, not much to look at. I wasn't expecting much from them. Everything got injected and rubbed last night, and put in to smoke at 8am. I took it real low and slow trying to coax some life into the flats. They hit 160 around 2pm, got the foil till 6, in the cooler till 7. I was very surprised at how well they came out. Super moist and tender for a HOF. When I took them off they were probe tender at 204. Made some cheesy potatoes to go with it, complete with the burnt end pieces of my home made bacon. Green beans are from the garden. All in all, a damn fine meal.

The butt is resting, I'll throw up a pic after its pulled.

Hahaha. No. She's still banned from brisket purchase for the foreseeable future.
 
Lol can't totally ban her, it looks like you did a fine job with what she bought.
Makes us have to step up and git r' dun when they do those type things
 
Thanks. And yes, I love their beers, esp the Imperial Stout.. Not cheap, but at 9% alcohol, I call it a bargain
 
Looks good from here. The brisket has good bark, smoke ring and is tender especially from the way it sounds was trimmed of ALL the fat? Nice work on the beans and taters! Mmm, stout beer and brisket. I call it all a WIN!:thumb:
