amounts for snack platters

I was asked to give a quote on a party for 100 pilots at our local air show, I got all the regular items figured out,, the pulled pork, chicken, side dishes, etc,,, but they want veggie platters and bologna and cheese platters,, and I'm not sure on the amounts. I know Sam's club has some nice veggie platters I'm gonna use,, but the bologna and cheese platters I want to make myself, as I am picky about why type of ring bologna I use. The ring bologna I will use comes in one pound rings,, and I'll probably use 3 or 4 different types of cheese,,, but how much bologna and cheese would I need? any help would be appreciated,, Thanks.
 
We make our own veggie platters as well. Buy the following from Sam's; Baby Carrots, Broccoli, Cherry Tomatos, Celery, and Cucumbers.

Make a dip from Dry Ranch Dressing Mix, Sour Cream and Mayo.

8#'s Bologna, 5#'s Cheese.
 
As this is a mixed bag, I'd think about only doing 2 - 2.5 Oz / person, that would give you 200 - 250 Oz in total or 12.5 - 15.625 lbs or 2.5 lb blocks x 5 or 6 for the cheese.
