Smoked/braised lamb shanks with gravy! I figure I will enter them in both the gravy and lamb throwdowns.

I got a couple of lamb shanks, chopped up some onion, carrot, parsnip, turnip, celery and fennel

Seasoned the shanks with olive oil, salt, and pepper, and browned them on the grill

Then into the smoker with apple wood for 2 hours.

Sauteed the onions for a few minutes, then added the rest of the veggies

Brought some wine to a boil and reduced to half, then added beef stock

Put the shanks into the pan with their drippings, added the veggies, liquid, salt & pepper, and some herbs (fresh rosemary and thyme, and a bay leaf)

Back into the smoker for another 2 hours

Here's how it looked when finished

Now for a proper gravy. 3T butter and 3T flour

Cook until bubbly and starting to brown

Add the liquid from the pan, bring to a boil. Looking good!

I also made some bread

And some chicken tenders for the wife and daughter who don't eat lamb

Here is the final result!

Outstanding cook...... the lamb looks delicious. How did you get that crust on the bread?

Bluesman, thanks! For the bread, that one uses a pretty wet dough and a long rise. Then scored with a sharp knife and baked in a really hot oven. The ring pattern is from rising in a floured banneton.

Agree, great bread.
I'm stunned that you used Koonunga Hills for cooking BTW:loco:

Those shanks look awesome !! Dont mind if I do take one off your hands :biggrin1:

That looks delicious and very well cooked :thumb: Now I gotta find some lamb shanks.

:hungry:That looks absolutely delicious. I love a well made lamb shank dish and you nailed it.

This reminds me to make some. It's been while.

Brilliant looking dish mate, nicely done, what's the red like never had it

It's been a while since I've posted. Good looking food. Lamb shanks is one of my favorites.

GREAT pictures. I appreciate people who can do both at the same time. When I am in my cooking mode I can't get into the photo mode. Great job.
