We're having a get together today for Easter. My son told me he had a ham that was so huge there was no chance he'd ever use it so stop over and get it for dinner today. So Tuesday my wife shows up with an uncured ham. Hmmmm what to do so I decided to brine it in some cure which is salt, pink salt, brown sugar and various herbs and spices. It won't be a totally cured ham but should be pretty tasty none the less.

So up at 4AM to start up my XL egg with wicked good lump and chunks of peach and apple for smoke.

Nice ham! Remember that the cure wouldn't have had a chance to penetrate to the bone in such a short time, so you have to cook it as raw pork.
