Pork Butt in Fridge- how long does it keep?

Heading out camping next weekend and would like to take some pork butt with me. I plan on cooking the butt on Sunday (5/19) and serving Saturday (05/25). Any issues w this plan?

Will a pork butt keep that long in the fridge?

Probably, but you can freeze it and then thaw it before you use it. That way you will be sure it's OK.

It depends on how old it was when you brought it home from the store. I've had a pork loin go South after just a few days. Take Ron's advice.

I'd think you are probably pushing the limit a bit, go with Rons advice and freeze it, take it out of the freezer on Thursday, you'll be good to go.

Thanks fella's... I didnt even think of cooking, then freezing it.:doh:

It has been in the fridge defrosting since Wednesday morning. I kept pushing the cook date back to make sure it was going to be OK come Saturday. Now that it will be frozen, I may just end up doing the cook Saturday.

I was also thinking of pre-smoking a couple fatties for biscuits (in the dutch oven) one morning. I assume those would be fine to cook then freeze too?

I cant wait to get out and do some camp cookin!!
