Last Phriday's cook...

-starter smoked sardines with a zesty salad
-main course pulled wild boar back/spine stew with Phries

Sardines were marinated in garlic,olive oil,salt,pepper.
Salad consisted of mixed green lettuce,tomato,onion,shallot,olive oil,vinigar,salt,pepper.

The wild boar back/spine was brined in salt,water,chardonnay (didn't had red wine),soya,ground black pepper and ground juniper berries...rubbed with Byron's Butt rub.

APhter smoking it was cooked in olive oil,butter,mustard,brown sugar,red wine,L&P,thyme,rozemary,juniper berries,bayleaf,cinnamon stick,onion,tomato,red bell pepper,garlic,chorizo,leek,shrooms,cayenne,smoked paprika powder,cumin and the lePhtover brine.

How did you like it? It really looks amazing. It seems it might be hard to tell with all the seasoning going on, but can you tell a diPhPherence in Phlavor between regular pork and wild boar?

That stew looks wonderful, Phu. Reminds me of a Mexican dish called birria. I'd hit that over and over.


I was inspired by a Portuguese dish called "gizado".
I lePht out the potatoes and carrots and gave it my own twist.

Pork and wild boar are 2 different things...wild boar is more "beePhier" than pork and has more Phlavour.
Can't compair it to anything else.

ahh I see, good to have a variety of grilling toys. I've been giving my smoky joe a work out this past year, it gets at least half of my cooks anymore.
