Beef Barley Soup...Looking for a Recipe

Greendriver got me thinking about soup tonight, and was wondering if anyone had a good recipe for beef barley soup they would like to share.

not sure, but I thought ZBQ did a batch a few weeks back?

Yeah, just checked and couldn't find it....hopefully he'll chime in.
 
Here's mine - I just kind of wing soups.

1 bottom round flat cubed (about 12 lbs)
1 box barley
2 onions chopped
3 carrots diced
3 stalks celery diced
4 cloves garlic fine chop
1 bottle red bourdeux wine
6 cups strong beef stock
2 bay leaves
3 TBL parsley (or 3 stalks fresh chopped)
3 tablespoons Worcestershire
1 tsp celery seed
1 tsp nutmeg
Salt & Pepper

Salt and pepper the meat and brown using 50/50 olive oil/butter - place browned meat in a 16 qt stock pot.
deglaze the skillet using the red wine - add to pot. Saute half the onions, carrots and celery and add to pot along with the rest of the veggies and spices.

Add half the remaining wine and 3 cups of beef stock (add water if there isn't enough liquid to cover) & simmer for about 2 hours. Add the barley and the remaining beef stock and simmer for an additional hour.

Makes 16 quarts.
